Sanitary quality of laying hen products
Salmonella contamination of laying hen flocks does not cause disease in the animals. However, it creates a public health problem due to the risk of transmission to consumers via the eggs. This infection is therefore strictly regulated, with serious economic consequences for farmers in the event of an outbreak. This major health concern is complicated by the difficulty in tracing this infection (one salmonella can contaminate an entire farm) and requires maximum precautions. These include increased biosecurity measures to control the hens’ environment and stabilize their intestinal microbiota.
